Easy 30-Minute Gluten-Free Mac and Cheese (No Box Required)

Making real stovetop mac and cheese takes exactly the same amount of time as the box, but it is infinitely better.


This recipe relies on a traditional "roux" made with gluten-free flour to create a velvety, thick cheese sauce that clings to every noodle.

The Secret to Cooking GF Pasta


The fastest way to ruin this recipe is to overcook your gluten-free pasta.


GF pasta goes from "al dente" to "mush" in a matter of seconds.

  • Set a timer. Check the pasta 2 minutes *before* the package says it will be done.
  • Rinse it! With regular pasta, you never rinse. With GF pasta, rinsing in cold water stops the cooking process and removes the excess starch that makes it gummy.

    The Recipe


    *Prep time: 10 mins | Cook time: 20 mins*


    Ingredients

  • 12 oz GF elbow macaroni
  • 1/4 cup unsalted butter
  • 1/4 cup GF 1-to-1 flour
  • 2 cups whole milk (warm)
  • 2 cups freshly grated sharp cheddar
  • 1/2 cup freshly grated gruyere or parmesan
  • 1/2 tsp salt
  • 1/4 tsp pepper, garlic powder, and paprika

  • Instructions

  • Pasta: Cook GF pasta until *al dente* (firm). Drain and rinse with cold water immediately.
  • Roux: Melt butter in a saucepan over medium heat. Whisk in GF flour and cook for 1 minute.
  • Bechamel: Slowly whisk in the warm milk. Keep whisking for 3-5 minutes until the sauce thickens.
  • Cheese: Turn off the heat! Stir in the spices, then fold in the grated cheese until totally melted.
  • Combine: Fold the pasta into the warm cheese sauce. Let it sit for 2 minutes so the pasta can absorb that cheesy goodness, then serve!
