My first "safe" night out after diagnosis ended with me violently sick from a "gluten-removed" beer the bartender swore was fine. Two years later, I've mapped every safe beer, cocktail, spirit, and mixer โ€” so you never have that night.

The Night That Ruined "Gluten-Removed" Beer For Me Forever

Three months after my celiac diagnosis, my friends dragged me out for "just one drink."

The bartender โ€” well-meaning, confident โ€” handed me a beer and said: "This one's gluten-removed. Totally safe for celiac."

I drank two. By midnight, I was in the bathroom. By 2am, I was in bed with cramps, brain fog, and that familiar burning feeling in my gut that told me I'd been glutened. Hard.

That "gluten-removed" beer? It was made from barley. The gluten was "broken down" with an enzyme โ€” but fragments remained. Enough to trigger a full immune response in my gut.

I learned the hard way that "gluten-removed" is NOT the same as "gluten-free." And that most bartenders, no matter how kind, don't understand the difference.

Since that night, I've spent two years researching, testing, and cataloguing every safe alcohol option for celiacs. This is the definitive guide.

The 3 Rules of Gluten-Free Drinking

Before we get to the fun stuff, burn these three rules into your brain:

  • "Gluten-removed" โ‰  "Gluten-free." Beers made from barley/wheat and treated with enzymes (like Omission) may still contain gluten fragments. The current ELISA test can't reliably measure hydrolyzed gluten. If you have celiac, avoid these.

  • Distilled spirits are generally safe. The distillation process removes gluten proteins. Vodka made from wheat, bourbon from barley โ€” distillation makes them safe for most celiacs. However, some highly sensitive celiacs react to grain-based spirits. Listen to your body.

  • Mixers are the hidden danger. That "safe" vodka becomes unsafe when mixed with malt-based ginger beer, wheat-thickened Bloody Mary mix, or barley-malt flavoring in some sodas. Always check the mixer.

  • Gluten-Free Beer: The Complete Ranked List

๐Ÿ† Tier 1: Best GF Beers (Made From GF Grains โ€” Certified Safe)

These are brewed from naturally gluten-free grains like sorghum, rice, millet, or buckwheat. They never touch barley or wheat.

Glutenberg โ€” Canadian craft brewery. Blonde Ale is the closest thing to a "regular" beer I've found. IPA is legitimately good. Available in most Whole Foods. *My #1 pick.*

Ground Breaker Brewing โ€” Portland-based, dedicated GF facility. Dark Ale is incredible. Limited distribution but worth seeking out.

Holidaily Brewing โ€” Colorado craft brewery. Buckwit Belgian is award-winning. Expanding distribution nationwide.

Ghostfish Brewing โ€” Seattle's dedicated GF brewery. Vanishing Point Pale Ale is outstanding. Can be shipped in some states.

Bierly Brewing โ€” McMinnville, Oregon. Small batch, exceptional quality. If you visit Oregon, this is a pilgrimage.

โญ Tier 2: Solid GF Beer Options

Redbridge (Anheuser-Busch) โ€” Made from sorghum. Widely available. Not the most complex flavor, but reliable and easy to find at any grocery store. Good "gateway" GF beer.

New Planet Beer โ€” Blonde Ale and Pale Ale are both solid. Colorado-based.

Buck Wild Brewing โ€” California. Their Pale Ale is refreshing and clean.

โš ๏ธ Tier 3: "Gluten-Removed" โ€” AVOID If You Have Celiac

These are made from barley/wheat and treated with an enzyme to break down gluten. They may test below 20ppm with standard tests, but the test cannot reliably measure hydrolyzed gluten fragments:

  • โ–บOmission โ€” Popular but NOT safe for celiacs. Made from barley.
  • โ–บStone Delicious IPA โ€” Barley-based, enzyme-treated.
  • โ–บEstrella Daura Damm โ€” Barley-based, enzyme-treated.

  • The Celiac Disease Foundation and Beyond Celiac both recommend avoiding gluten-removed beers.

๐Ÿท Hard Cider: The Easy Alternative

If you're tired of sorghum-based beer, hard cider is your best friend. Most ciders are naturally GF (made from apples or pears):

๐Ÿ† Angry Orchard Crisp Apple โ€” Widely available, refreshing, certified GF

โญ Ciderboys โ€” Multiple flavors, all GF

โญ Ace Cider โ€” Pineapple and Guava flavors are incredible

    โœ… Strongbow โ€” Classic British-style, dry finish

โœ… Woodchuck โ€” Vermont craft cider, many flavors

Warning: A few ciders add barley malt for color/flavor. Always check the label or scan it.

Safe Spirits & Liquor (The Distillation Guide)

    โœ… Always Safe (Naturally GF)

  • โ–บTequila โ€” Made from agave. 100% agave tequila is always GF. *My go-to spirit.*
  • โ–บRum โ€” Made from sugarcane. Always GF.
  • โ–บMezcal โ€” Made from agave. Always GF.
  • โ–บBrandy/Cognac โ€” Made from grapes. Always GF.
  • โ–บWine โ€” All wine (red, white, rosรฉ, sparkling) is naturally GF.

  • โœ… Safe After Distillation (But Check Flavored Versions)

  • โ–บVodka โ€” Even wheat-based vodka is safe after distillation. But if you're cautious, choose potato-based (Chopin, Luksusowa) or grape-based (Cรฎroc).
  • โ–บWhiskey/Bourbon โ€” Distillation removes gluten. Most celiacs tolerate these fine. If sensitive, try Hudson Baby Bourbon (corn-based).
  • โ–บGin โ€” Distilled, generally safe. Hendrick's and Tanqueray are popular choices.

  • โš ๏ธ Check Carefully

  • โ–บFlavored vodkas/rums โ€” Added flavors AFTER distillation may contain gluten. Check each one.
  • โ–บCream liqueurs โ€” Baileys contains whiskey (distilled, likely safe) but also cream. Some celiacs react.
  • โ–บSake โ€” Made from rice, but some use barley koji. Check the brand.

  • ๐Ÿšซ Avoid

  • โ–บBeer โ€” (unless certified GF โ€” see above)
  • โ–บMalt beverages โ€” (Smirnoff Ice, Mike's Hard โ€” contain malt = barley)
  • โ–บMalt liquor
  • โ–บCoolers with malt base

  • 5 Celiac-Safe Cocktail Recipes

    1. The Classic GF Margarita

  • โ–บ2 oz silver tequila (100% agave)
  • โ–บ1 oz fresh lime juice
  • โ–บยพ oz agave nectar or simple syrup
  • โ–บSalt rim (always GF)
  • โ–บShake with ice, strain, enjoy

  • Why it's safe: Tequila = agave. Lime = fruit. Agave = plant. Zero gluten risk.

    2. Moscow Mule (GF Version)

  • โ–บ2 oz potato vodka (like Chopin)
  • โ–บยฝ oz fresh lime juice
  • โ–บ4 oz GF ginger beer โ€” use Fever-Tree or Q Ginger Beer
  • โ–บCRITICAL: โ€” Most ginger beers are safe, but ALWAYS check. Some contain malt.

  • 3. GF Paloma

  • โ–บ2 oz tequila
  • โ–บ3 oz fresh grapefruit juice (or Jarritos Grapefruit โ€” naturally GF)
  • โ–บยฝ oz lime juice
  • โ–บPinch of salt

  • โ–บ1 oz fresh espresso (cooled)
  • โ–บยฝ oz simple syrup
  • โ–บยฝ oz Kahlรบa (GF โ€” made from rum, sugar, coffee)
  • โ–บShake hard with ice, double strain into a coupe glass

  • The Bar Survival Guide (Drinking Out With Celiac)

    Before You Go

  • Research the bar's cocktail menu online
  • Check if they serve any certified GF beer (Glutenberg, Ghostfish, etc.)
  • Eat before you go โ€” bar snacks are usually NOT safe (pretzels, fried foods, bread)

  • At the Bar

  • Skip the beer menu unless you see certified GF options
  • Order spirits neat, on the rocks, or with safe mixers (soda water, tonic, fresh juice)
  • Ask about mixers: "Is your Bloody Mary mix house-made?" "Does your ginger beer contain malt?"
  • Avoid: draft beer taps for cider (cross-contaminated from beer lines), anything with "malt" in the name

  • The Safe Drink Order Cheat Sheet

When in doubt at any bar, these are ALWAYS safe:

  • โ–บTequila + soda water + lime
  • โ–บRum + Coke (Coca-Cola is GF)
  • โ–บVodka + cranberry juice
  • โ–บWine (any)
  • โ–บHard cider (bottled, not draft)
  • โ–บGin + tonic

    Frequently Asked Questions

    Is Corona gluten-free?

No. Corona is made from barley malt. Despite internet rumors, it contains gluten. It may test below 20ppm in some tests, but the brewing process starts with barley. If you have celiac, avoid it.

    Can celiacs drink whiskey/bourbon?

Most celiacs can safely drink distilled spirits, including whiskey and bourbon. The distillation process removes gluten proteins. However, a small percentage of highly sensitive celiacs report reactions. If you're newly diagnosed, start with naturally GF spirits (tequila, rum) and test grain-based spirits later.

    What about gluten-free vodka?

All distilled vodka is technically gluten-free, even if made from wheat. However, if you want extra peace of mind, choose vodka made from potatoes (Chopin, Luksusowa), grapes (Cรฎroc), or corn (Tito's).

    Is White Claw gluten-free?

Yes! White Claw is made from a gluten-free alcohol base (fermented sugars, not malt). Most hard seltzers (White Claw, Truly, Bon & Viv) are GF. Always verify on the can โ€” a few brands use malt.

Can I drink at a brewery?

Dedicated GF breweries (Ghostfish, Glutenberg taproom, Holidaily) are safe. Regular breweries that offer one "GF" option may have cross-contamination from shared equipment. Ask about their process.
