- 2 1/2 cups (350g) gluten-free 1-to-1 baking flour
- 1/2 tsp xanthan gum (omit if flour contains it)
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) light brown sugar
- 3/4 cup (1.5 sticks) unsalted butter, softened
- 4 large eggs, room temperature
- 2 tsp pure vanilla extract
- 1 cup whole milk (or oat milk), room temperature
- 2 tbsp sour cream or plain yogurt
- FROSTING: 2 cups (4 sticks) unsalted butter, softened
- FROSTING: 5 cups (600g) powdered sugar, sifted
- FROSTING: 2 tbsp heavy cream or oat cream
- FROSTING: 2 tsp pure vanilla extract
- FROSTING: Pinch of salt
Instructions
Preheat oven to 350°F. Grease and line two 9-inch round cake pans with parchment paper circles.
In a medium bowl, whisk together GF flour, xanthan gum, baking powder, baking soda, and salt.
In a large bowl (or stand mixer), cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
Add the eggs one at a time, mixing after each. Add the vanilla and sour cream and mix.
Alternate adding the flour mixture and milk in three additions (flour-milk-flour), mixing on low just until combined after each addition.
Divide batter evenly between the two prepared pans. Smooth the tops.
Bake for 28-32 minutes, until a toothpick inserted in the center comes out clean.
Cool in pans for 10 minutes, then invert onto cooling racks. Cool completely before frosting.
FROSTING: Beat softened butter for 5 minutes until pale and fluffy. Gradually add powdered sugar 1 cup at a time. Add cream, vanilla, and salt. Beat on medium-high for 3-4 minutes until smooth.
Place one cake layer on a stand or plate. Spread 1 cup frosting on top. Place second layer. Frost top and sides with remaining buttercream.
